Swede Colcannon

Serves 4


300g potato chopped

1 medium swede cut into small chunks

½ small Savoy cabbage shredded

100ml milk

50g butter


  1. Boil swede and potatoes together for about 15 mins, adding the cabbage for the last 2 minutes. Once cooked, remove cabbage with tongs and set aside
  1. Drain water from potatoes and swede, mash with the milk butter and season well, then stir through the cabbage
