Swede roasted in Honey and Ginger

1 medium swede 650-750g
2cm root ginger
2 tbsp olive oil
A nob of Butter
1 tbsp clear honey
1 rounded tbsp. ground ginger
2 tbsp sesame seeds
Salt and Pepper for seasoning

Pre-heat the oven to 200C/400F Gas mark 6 (reduce heat slightly for fan ovens)

Peel and dice swede into 2 cm chunks
Place in pan cover with boiling water bring back to the boil and cook for 5 mins then drain well.
Peel and grate the root ginger add this to the pan containing the swede also add olive oil, clear honey, ground ginger and season with salt and pepper
Place the swede mixture on parchment paper on a baking tray and cook in oven for 20-25 minutes.
Remove from oven and put in heated serving dish, sprinkle with sesame seeds and serve
